Spinach is an extremely cold hardy crop from the same family that gives us beets and chard. We normally grow spinach only in the spring. It is also one of the most nutrient-dense vegetables we grow.

Storage: Like lettuce, spinach should be stored dry, in plastic in the fridge. Do not store wet spinach. It can also be frozen like kale — blanch in boiling water, drain, and store in airtight bags in the freezer.
