Eggplants are long prized for their deep purple, glossy beauty as well as their unique taste and texture. They belong to the nightshade family of vegetables, which also includes tomatoes, sweet peppers and potatoes. We grow a handful of varieties at Root Down Farm, the classic Italian-style Nadia, a gorgeous psychedelic purple one called Beatrice, as well as Japanese-style eggplants and mini-eggplants.

Storage: If you don’t intend to eat the eggplant within 2 days, it should be refrigerated. To refrigerate, wrap in a paper towel and place in a reusable container or perforated plastic bag in the crisper section of your refrigerator.

Preparation: You have lots of options with the eggplant: bake, fry, saute. Enjoy exploring!
